Fresh Milled Whole Wheat Bread

The wheat berry is an amazing thing. As long as it is stored in a dry place it can be preserved for a very long time. (like so long they have found some in an old egyptian tomb, planted them and they sprouted) God made the wheat berry to be sealed and contain all of the vital nutrients. However, the minute the berry is busted when you mill it into flour the nutrients start to oxidize. And with in 72 hours the majority of the good vitamins and nutrients have been oxidized. So fresh milled flour is important in order to get its good benefits. And when its not going to be used right away you can store it in the freezer to help maintain more of those nutrients. So it always amazes me that in the grocery store the flour is stored on the regular shelf in the baking aisle.
